Layered with seasoned ground beef, tender beans, sweet corn, zesty tomatoes, and gooey melted cheese, this dish is a symphony of textures and tastes that will have everyone asking for seconds.

Ingredients List:

 

  1. Cooking spray
  1. 1 pound ground beef
  1. ½ cup chopped onion
  1. 15 ouncecan tomato sauce
  1. 15 ouncecan black beans
  1. 14 ounce can diced tomatoes
  1. 75 ouncecan whole drained kernel sweet corn
  1. 5 ouncecan chopped drained green chiles
  1. 2 tspchili powder
  1. 1 tspground cumin
  1. 1 tspminced garlic
  1. ½ tspdried oregano
  1. ½ tspred pepper flakes
  1. 6 flour tortillas
  1. 2 cups shredded Cheddar cheese

 

Let's Get Cooking!

 

Step 1. Preheat & Prep:

  • Set your oven to 350 degrees F (175 degrees C).
  • Lightly grease a 13x9-inch baking dish with cooking spray.

Step 2. Brown the Beef:

  • Place a large skillet over medium-high heat.
  • Add the ground beef and chopped onion. Cook and stir until the beef is browned, about 5 to 7 minutes.
  • Drain off any excess grease.

Step 3. Simmer the Filling:

  • Stir in the tomato sauce, black beans, diced tomatoes, corn, and green chiles to the browned beef.
  • Season generously with chili powder, cumin, garlic, oregano, and red pepper flakes.
  • Reduce heat to low and let the mixture simmer for 5 minutes, allowing the flavors to blend.

Step 4. Layer It Up:

  • Spread approximately half of the beef mixture in the bottom of your prepared baking dish.
  • Arrange 3 tortillas over the beef, overlapping them slightly if needed.
  • Spread another half of the beef mixture over the tortillas.
  • Sprinkle 1 cup of shredded Cheddar cheese over the beef layer.
  • Repeat with the remaining tortillas, beef mixture, and Cheddar cheese.

Step 5. Bake to Perfection:

  • Bake in your preheated oven for about 15 minutes, or until the casserole is heated through and the cheese is melted and bubbly.

Step 6. Cool & Enjoy:

  • Let the tortilla bake cool for 5 minutes before serving. This helps the layers set and prevents burns.
