Aquatic products are rich in protein, and the preparation of natural antioxidant active peptides has received widespread attention. In the past decade, scallop culture has developed rapidly in many Asian countries. In 2014 , China's scallop aquaculture production was nearly 1.65 million tons . With the expansion of scallop culture and the increase in production in China, the demand for scallop processed products also increased. The scallop gonads are the edible by-products in the production of shellfish products. Its protein content is as high as 60% or more (calculated on a dry basis), and the female gonad hydrolysate prepared by enzymatic hydrolysis has certain antioxidant activity.
